What are the most appropriate attributes for beverages: product attributes or specification attributes (I think for example at dry, demi-dry, sweet, demi-sweet for wines, filtered, dark etc. for beers, degrees for any kind and so on) for being also able to filter about?

Filtering just works with specification attributes. Attributes aka Product Variants are required if the customer

must make a choice between values when ordering. So in other words, there could be situations where you must specify\provide

both, specification attributes and product attributes.
