Way To for Dev server not to send external emails?

We have a dev server and we sometimes have customer data in the system.  Perfect world we would have all emails rerouted to a single email address from this server for testing purposes.  

If there isn't a simple way to do this, does anyone have a hint on how we could intercept the email in a custom plugin before the email service sent it out?

Unfortunately that's not possible. But you can drop emails in a directory on your dev machine via pickupDirectoryLocation setting in web.config.

Version 3.1 also provides a hidden setting for this.
